I've been looking into anonymous crypto exchanges and I'm a bit confused about what “anonymous” actually means in practice.
Does it mean you can trade without creating an account or providing personal information, or does it mainly refer to not having your identity publicly connected to your transactions?
I'm also curious what people consider the biggest trade-off with these platforms. Is it liquidity, security, available trading pairs, or something else?

The term can be a little misleading because privacy and complete anonymity aren't necessarily the same thing. I'd look at what information the platform actually requires, how transactions are handled, and what privacy features are available instead of assuming “anonymous” means completely untraceable.
